If you’ve ever been a customer at the Mad Platter in Mashpee Commons, then you know Chef Ralph Binder will rock at running the restaurant at the new Barnstable Municipal Airport. I just recently discovered the chef’s relocation to the airport terminal after his long-term career as the chef of the Mad Platter as well as the operator of Millway Fish and Lobster in Barnstable Village.  

Though I’m sure he will be missed at his well established Cape Cod catering and take out location, his goal to make breakfast, lunch, and dinner memorable experience for folks traveling to and from the islands or Logan Airport seems pretty promising. 

Putting together giant platters of hearty Italian comfort dishes like baked ziti, eggplant parmesan, and lasagna done in three different ways, along with enormous and mini sandwiches and antipasto trays filled with all sorts of meats, Binder is known as the “Mad Platter” himself—part of why he was thought to be the perfect fit in the new terminal restaurant.  His knowledge and experience for putting out large scale specialty foods gives him an upper hand on taking on the ultimate challenge of delivering “great” tasting food (something no one really expects to experience at an airport).

The other selling point is his food-loving personality. You could always tell just by watching the enthused chef in his quaint Mashpee storefront that his passion for food is the real deal. I’m confident that Binder’s airport fare and presence e in the new terminal will be nothing short of comforting for his new customers who are seeking just that.
